Recipe for the Viral Yoghurt Clusters

Ingredients

2 cups Fresh Blueberries (or any fruit of your choice)– rinsed and dried

1 cup Greek Yoghurt

1 cup Dark Chocolate or Semi-Sweet Chocolate

Sea Salt – optional for topping

Honey (optional)

2 tbsp Coconut Oil (optional)

Vanilla Essence (optional)

Method

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl combine the 2 cups of blueberries or any berries of your choice with the Greek yoghurt and mix well to coat all pieces of fruit.
  3. Add some honey and vanilla essence if you’re using plain Greek yoghurt.
  4. Use a spoon or cookie scoop to place small clusters of the yoghurt-blueberry mixture onto the lined baking sheet. Place them about 2 inches apart so they are not touching.
  5. Place the baking sheet with the clusters on it into the freezer for 20-25 minutes, until they are frozen solid.
  6. In a microwave-safe bowl melt the chocolate mixed with some coconut oil in 30-second intervals until it is mostly melted.
  7. Remove and stir to melt the rest of the chocolate until silky and smooth. Let the chocolate rest for 5 minutes.
  8. Take out the frozen yoghurt clusters from the fridge and carefully dip each one into the melted chocolate using a spoon or fork to help coat each one, then place them back onto the lined baking sheet. Continue until you have coated all of the clusters.
  9. Top with a pinch of sea salt, if desired.
  10. Let them sit until the chocolate hardens and enjoy!
