Recipe: Kriti Sanon’s Quinoa Oats and Banana Cake

Ingredients

2 cups Flour

1 ½ tsp Baking Soda

½ tsp Cinnamon Powder

¼ tsp Nutmeg

2 Eggs

3 Ripe Bananas

1 cup Sugar or sweetener of choice

¼ cup Oats

½ cup Butter

1 cup Cooked Quinoa

Method

  1. Begin by mashing the ripe bananas in a mixing bowl until they form a smooth consistency.
  2. In a separate bowl, sift the flour, baking soda, cinnamon powder, and nutmeg. Mix well to ensure the dry ingredients are evenly combined.
  3. In another bowl, whisk together the eggs, sugar, and butter until they are thoroughly blended.
  4. Gradually pour the dry ingredient mixture into the bowl with the wet ingredients, ensuring to incorporate them gently.
  5. Add the cooked quinoa and oats to the batter, and using the cut-and-fold technique, carefully combine all the ingredients until a uniform mixture is achieved.
  6. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a cake tin and line it with parchment paper to prevent sticking.
  7. Pour the cake batter into the prepared cake tin, ensuring it is spread evenly.
  8. Bake the cake in the preheated oven for approximately 45-50 minutes or until a toothpick inserted into the centre comes out clean.
  9. Once baked, remove the cake from the oven and allow it to cool in the tin for a few minutes.
  10. Transfer the cake onto a cooling rack, gently removing the parchment paper. Allow it to cool completely before slicing.
  11. Serve the delicious Quinoa Oats and Banana Cake while still warm, accompanied by a steaming cup of coffee or tea.
