Jackfruit Is The Vegan Superfood That Will Make You Forget Meat

Here is an easy Jamaican Jerk Jackfruit Caribbean Black Bean Mango Wrap recipe by Vegan Richa that you can try whenever you’re craving some no-meat meat.

Ingredients

  • 1 Large Tortilla Wrap
  • 500 gm Jackfruit
  • Jamaican Jerk Seasoning
  • 500 gm Black Beans
  • 2 Lemons
  • Mango
  • Cucumber
  • Cilantro
  • Sugar

Part 1: Jamaican Jerk Jackfruit

Step 1: Wash the jackfruit pieces well and drain the juice of the fruit out by pressing them into a paper napkin. Once the juice has been removed and the fruit has dried, shred them into tiny pieces.

Pro Tip: If you want the jackfruit to have more flavour, add your favourite spices and marinate it in the fridge for an hour or overnight.

Step 2: Heat 1 teaspoon of oil in a pan on medium heat. Next, add the shredded jackfruit pieces along with 2 tablespoons of Jamaican Jerk Seasoning to the pan. Cook for about 2-3 minutes.

Step 3: Then, squeeze a fresh lemon and 2 teaspoons of water along with a teaspoon of sugar into the pan. Partially cover it for 25-30 minutes and stir the dish occasionally.

Step 4: Once the mixture is dry, add salt according to taste. Next, add 1 teaspoon of oil and continue to roast the jackfruit until it’s golden brown.

Part 2: Caribbean Black Beans

Step 1: Heat 1 tablespoon of oil in a pan over medium heat, then add chopped slices of onions and garlic and cook until they turn slightly brown.

Step 2: Add boiled black beans to the pan with your preferred spices along with 1 cup of water. Squeeze a fresh lime then let it simmer for 10 minutes. Make sure to stir it occasionally.

Part 3: The Wrap

Step 1: Take a large tortilla wrap and layer the black beans followed by cilantro and then a good spoonful of the jackfruit jerk. Now, add a few chopped pieces of cucumber and mango to bring in some crunch and sweetness.

Step 2: Fold the wrap into a tight burrito and enjoy!
