An inside source close to Middleton said, “Kate favours organic foods for lunch and incorporates as many raw ingredients as possible.” It was revealed that she absolutely loves eating a hydrating watermelon salad, which is perfect for eating not only on a hot, scorching summer day, but also all year round thanks to its nutritional benefits.

“Watermelon salads are a staple of Kate’s lunches and include juicy pink watermelon mixed with avocado, onion, cucumber, and feta cheese—the perfect mix of sweet and savoury,” the source said. This fruity salad combination is *definitely* going to make you feel that watermelon sugar high!

The easy, no-cook recipe features a mix of fruits and herbs, like chopped watermelon, cucumber, avocado, and mint. The star ingredient, watermelon, is brimming with loads of antioxidants like lycopene, which is linked to improving blood pressure and cardiovascular health, reducing cholesterol, and lowering your risk of chronic illness. It is also filled with loads of vitamin C that helps boost your immune system and promote collagen production.

The nutritious salad is tossed in a vinaigrette with gut-boosting apple cider vinegar, vitamin-filled lime juice, heart-healthy olive oil, and salt and pepper. Ingredients

3 cups Watermelon, seedless and cubed⁣

1 English Cucumber, chopped⁣

1 Avocado, chopped⁣

1/2 cup Feta Cheese, crumbled⁣

1 bunch Mint, chopped⁣

1/4 cup Olive oil⁣

1 Lime

2 Tbsp Apple Cider Vinegar⁣

Salt and Pepper,⁣ to taste

Method

  1. Peel your watermelon and cut it up into cubes, add to a bowl.
  2. Peel your avocado and remove the pit. Cut into cubes and add to the watermelon.
  3. Chop your cucumber into small pieces and add to a bowl.
  4. Roughly crumble or cut your feta into small cubes and add to the bowl.
  5. Add your apple cider vinegar, lime and olive oil.
  6. Next, season with salt and pepper.
  7. Chop up your mint leaves and add them in.
  8. Give everything a good mix. Serve, and enjoy!
