Mumbai-based foodies, you’re in for a treat! Michelin-starred chef Olivier Jean, from L’Atelier Robuchon, is taking over the award-winning restaurant Vetro at The Oberoi Mumbai from the 16th to the 18th of March.
As another way to deliver the best dining experiences to their guests, The Oberoi Mumbai has called upon the celebrated chef to create his magic in the kitchens of Vetro and give the diners a taste of the unique French-Asian fusion cooking the Geneva-based restaurant is famous for.
Chef Olivier Jean trained with the iconic Chef Joel Robuchon in Paris and Monaco and spent six years at Atelier in Tapei while leading the openings in Miami, New York, and Montreal. Since then he has been at the helm of L’Atelier Robuchon at The Woodward in Geneva, Switzerland. It’s a one-of-its-kind restaurant with an open kitchen concept that offers a theatrical dining experience with an intimate atmosphere.
The Michelin-starred chef is known for his unusual flavour combinations and pioneering culinary techniques. He is bringing a special menu for Vetro with some of his signature dishes.
Keeping in mind the leaning towards vegetarian dining options in the country, the chef has curated a special menu for vegetarians with dishes like Farro Wheat simmered with heirloom mushrooms, black garlic, trumpet consomme with Barolo vinegar, and Black Truffle. The non-vegetarian menu consists of some exciting dishes including a Spring Lamb Loin which is served with black truffle and savoy cabbage, and a millefeuille of vegetables.
The menu also has the chef’s signature dessert The Black Forest with a dark chocolate cremeaux and a light mousse flavoured with kirsch.
