Genelia D’Souza’s Vegan Baked Potatoes Are Easy & Delicious

Genelia D’Souza has been a vocal champion for all things vegan and often takes to Instagram to share easy and delicious vegan recipes that she whips up for her kids, like these chocolate pancakes.

Recently, the actress posted pictures of a quick and healthy vegan meal that she prepared for her family which looked delicious.

According to her, the homemade vegan, loaded potatoes were low in carbs and high in protein. She added the hashtag #PlantPower along with the recipe to promote plant-based ingredients in daily diets.

Here’s a simple recipe for making vegan, loaded potatoes like Genelia D’Souza…

Ingredients

175 gms Potatoes

150 gms Vegan Keema (minced meat), cooked

25 gms Vegan Cheese

½ tbsp Olive Oil

Salt to taste

Method

1) Preheat the oven to 200-degree celsius.

2) Scrub potatoes clean under cold running water and rub with olive oil. Using a fork or a knife, puncture potatoes in several spots. Then wrap the potatoes individually in foil and place them on a rimmed baking sheet.

3) Bake until a toothpick inserted into the potatoes through the foil meets some resistance about a half-inch under the surface, about 30 minutes. Remove from oven, carefully open foil, and place potatoes back on baking sheet on top of foil. Continue baking until the toothpick inserted into the potato meets no resistance and the skin is crisp, about 30 minutes longer. Remove from oven and let cool for about three minutes.

4) While the potatoes cool down, heat the vegan cheese in a saucepan until it melts completely.

5) Slice the tops of the potatoes with a knife and press it inwards to create a pocket. Use a fork to lightly fluff up the insides of the potatoes.

6) Spoon the vegan keema (minced meat) and melted cheese on the potatoes and enjoy while hot.
