If you’re wondering what signature meal Christmas Queen and mum of two Mariah Carey is making for the holidays, here’s your clue—it will feature a super amazing sauce. The ‘All I Want For Christmas Is You’ hitmaker is synonymous with all things Christmas, and it’s no surprise that she’s really into the holiday music, the movies, Santa, the snow, and the baking and cooking, which she swears she does herself.
There really is just one thing Carey needs for Christmas, and it’s not “you.” It’s a snowy retreat with family, Santa, and—most importantly—a large kitchen where she can let her culinary prowess shine.
Carey’s iconic hit, ‘All I Want for Christmas is You,’ has topped the Billboard charts more than any other Christmas song in history. Not unlike her holiday hit, her cooking skills tend to really come into prominence during this time of the year too. In an interview, the singer confessed that she cooks nonstop throughout the holiday season. “I like to cook every year. I cook on the 23rd, 24th, and 25th—all different menus,” she said.
Here’s the recipe for Mimi’s secret sauce to make your holiday meal planning easy.
Two 28oz cans of San Marzano Tomatoes (crushed)
3 Garlic Cloves, minced
2 tsp of Salt
1 tsp Black Pepper
1/4 cup chopped flat Italian Parsley
1/4 cup Olive Oil
- In a large saucepan, heat the olive oil over medium-heat.
- Add the crushed garlic and cook until light golden brown, for about 5 minutes.
- Pour in the tomatoes and bring to a boil, stirring frequently.
- Add salt and pepper and lower the heat and simmer for about 15-20 minutes.
- Stir in the chopped Italian parsley, and voila!
Enjoy this versatile and tangy marinara sauce at Christmas or any time of the year as a pasta topper or with vegetables, eggs, curries and risottos, among other delicious meals.
