Move Over Cronuts, It’s Time To Try Our New Favourite Dessert, Bombolini

It’s kind of hard to resist a batch of fresh, hot doughnuts, especially when they are plastered all over social media. With people coming up with new desserts every other day, it is safe to say that your Instagram might not be the best place for you, especially if you are trying to cut down on sugar.

And when we think about sweet, baked goods, this dessert in particular has topped our favourites list. Bombolini is an Italian doughnut that is filled with delicious vanilla cream and can be served anytime you want, even for breakfast. This doughnut variant is also super easy to make and can work great as a sweet munchie for a girls‘ night in.

Is your mouth watering yet? Here is how you can make the Bombolini at home without an expensive trip to a bakery (or Italy).

Ingredients

  • Eggs
  • All-Purpose Flour
  • Sugar
  • Instant Yeast
  • Salt
  • Milk Powder
  • Vanilla Extract
  • Butter
  • Lemon Zest
  • Piping Bag

Part 1: The Filling

For the vanilla cream, you will need:

  • ½ Cup Milk
  • 3 Egg Yolks
  • 100gm Sugar
  • 2-3 Drops Of Vanilla Extract
  • Lemon Zest

Step 1: Take a large bowl and add three egg yolks, and 100 gm of sugar and mix them well. Then, add a few drops of vanilla extract and the zest of one fresh lemon, and whisk them well until they are well combined.

Step 2: Then, pour the mixture into a saucepan and heat it on a low flame for 10-15 minutes. Make sure to constantly stir the mixture until the texture is thick and creamy. Once it’s done, keep it aside to cool it down.

Pro Tip: Do not increase the temperature as it might scramble the eggs in the mixture.

Part 2: The Dough

For the dough, you will need:

  • 1 Teaspoon Of Yeast
  • 2 Cups All-Purpose Flour
  • 1 Egg
  • 1 Egg Yolk
  • 15 gm Butter
  • 130 ml Milk

Step 1: Take a bowl and add 1 teaspoon of yeast and 2 cups of all-purpose flour. In another bowl, add 1 egg and 1 egg yolk, 15 gm butter, 130 ml of milk, and mix them until you can’t see any lumps. Then, take both the mixtures, add them into one big bowl, and mix them until it turns into a smooth and slightly tacky dough.

Step 2: Put the dough on a clean surface and knead it 2-3 times until it is soft and stretchy. Once you are done, shape the dough into a ball.

Step 3: Now place the dough into a clean bowl, which is lightly greased with oil or butter, and cover the bowl with plastic wrap. Leave it on the counter for 2-3 hours until the dough has risen.

Step 4: Once the dough has risen, place it again on a clean work surface, knock out all the air bubbles, and knead it a few more times. Once done, roll it again into a smooth ball.

Step 5: Then, flatten the round dough and roll them into a thick rectangle with a rolling pin. Make sure to not make it too thin.

Step 6: Use a circular cookie cutter or the rim of a glass and cut out round doughnuts from the dough.

Step 7: Place the cut-out doughnuts on a parchment paper placed tray and cover it loosely with plastic wrap. Keep it out for 1-1.5 hours or until the doughnuts have become bigger.

Step 8: Once the doughnuts have risen, fry the doughnuts in a pot full of oil until they’re golden brown on both sides. Once they’re fried, let them cool down.

Pro Tip: While still warm, roll the Bombolonis in powdered sugar to make them extra sweet.

Step 9: Once the doughnuts are ready, fill the Bombolinis by inserting a small knife into the doughnut's side and moving it around to make a small hole. Then, fill a piping bag with the filling and pipe it into the doughnuts.

Your Bombolinis are ready! You can also fill the doughnut with any kind of filling that you like. And while it is preferred you consume them on the day they’re made, you can also stored them in the fridge, in an airtight container, for 1-3 days.
