All you will need is some ripe avocado, 2-3 slices of bread of your choice, paprika, lemon and some feta cheese.

Here’s how you can make it:

1. Toast your bread until it’s slightly brown and crispy. You can add a few drops of olive oil to add more flavour to the toast.

2. Next, scoop out the avocado and mash it in a small bowl while adding salt, pepper, a few drops of lemon and paprika.

3. Once you are done mixing the avocado, apply a generous layer of the mash to the toast. Finally, top it with feta cheese and cherry tomatoes.

Berry Smoothie Bowl

The easiest way to get some Instagram brownie points? Start your day with a pretty smoothie bowl. Not only is it aesthetic, but it’s also full of nutrients and fibre. The best thing about smoothie bowls is that you can always make them according to your taste! All you need is some of your favourite fruits, almond milk, honey and granola.

Here’s how you can make it:

 1. Cut your fruits into small pieces and freeze them for a few hours. Once the fruits are frozen, put them in a blender.

2. Add 3 tablespoons of almond milk to the blender. Make sure to not put too much milk to maintain the thick texture of the smoothie.

3. Add some honey if you like a sweeter smoothie bowl.

4. Blend everything together until it’s thick and then take the smoothie out and put it into a bowl.

5. Finish it off with a few bits of granola and a few more fruits to get the perfect fruity breakfast.

Fruity Fro-Yo Bars

Are you someone who often misses their breakfast because you’re busy running out the door? This breakfast bar will be your new favourite go-to. Frozen yoghurt bars are the perfect bite-sized meals for a quick, light and healthy breakfast. Great even on the go, this vegan ‘Fro-Yo Bars’ recipe by Florentina from the Veggie Society is easy to make and super delicious. You will need greek yoghurt, fresh or frozen berries of your choice, vanilla extract, lemon and maple syrup.

Here’s how you can make it:

Add the berries to a saucepan and squeeze in half a lemon to cook it into a puree. The mixture should simmer until you’re left with a smooth mixture. Once done, allow it to cool off.

2. In another bowl, add 2 cups of greek yoghourt, a little bit of vanilla extract, and 1 tablespoon of maple syrup and mix it well. Once it’s mixed, fold in the cooled down puree.

3. Now, pour in the yoghourt mixture into an 8x12 shallow baking dish that’s already lined with parchment paper. You can even add a few pieces of berries and granola on top.

4. Finally, freeze the mixture for about 4-6 hours. Once fully frozen, cut the mixture into 2-4 inch bars and enjoy!
